Apple season is one of my favourites—there’s just something about crisp, fresh apples that makes them so versatile. Whether you’re baking, boiling, or simply biting into one as a snack, apples never disappoint. As always, I’m all about minimising waste in my kitchen, so when I was peeling apples for a healthy breakfast crumble, I realised I could turn those peels into a delicious spiced apple tea—a perfect way to use up those peels and create a cozy drink.
So here is my (anytime of day) healthy apple crumble and spiced apple tea:
Apple Crumble
Ingredients:
- 6 organic apples diced
- 1-2 organic cinnamon sticks
- 2-3 organic whole cloves
- 1-2 star anise (optional)
- 1/2 cup organic rolled oats
- 1/2 cups stoneground flour
- 1/4 cup coconut sugar
- 1/4 tsp organic ground cinnamon
- 1/4 tsp mixed spice
- 1/8 tsp salt
- 60g butter
Instructions:
- Place the diced apples, cinnamon sticks, cloves, star anise, and a splash of water in a pot and simmer gently for 5-7 min until slightly softened.
- Preheat the oven to 175 degrees.
- While the apples are cooking, place the rest of the dry ingredients in a bowl and mix.
- Add in the butter and work it in with your fingers through the mixture, creating the little crumbles. The mixture will resemble wet sand once it is ready. (with some larger crumble pieces)
- Take your apples off the stove and place in an 20x20cm oven dish. Sprinkle all your crumble over the top of the apples.
- Place in the oven and bake until golden brown and aromatic. Around 15 min.
- Delicious warm straight out the oven!
Serve with double cream greek yoghurt or thick cream. Enjoy!
Spiced Apple Tea with Apple Peels
Ingredients:
- Apple peels from 6 apples
- 1-2 organic cinnamon sticks (or 1 tsp ground cinnamon)
- 2-3 organic whole cloves
- 1-2 star anise (optional)
- 1-2 slices of fresh ginger (optional, for a kick)
- 2-3 cups of water
- Honey to taste
- Juice of half a lemon
Instructions:
- Place the apple peels, cinnamon sticks, cloves, star anise, and ginger (if using) in a pot.
- Pour the water over the spices and peels, and bring it to a gentle boil.
- Once it starts boiling, lower the heat and let it simmer for 15 minutes to infuse the flavours.
- Taste and adjust sweetness by adding honey if desired. Add juice of lemon for a little tang.
- Strain the tea into cups and enjoy it hot or cold, especially with your apple crumble!
This is a super cozy drink, and it’s a great way to use up those peels!
